Ingredients
- 25gm butter
- 2 tbs olive oil
- 3 brown onions, thinly sliced
- 1/2 tsp salt
- 1/2 cup balsamic vinegar
- 1/2 cup light brown sugar
- 2 thick rib fillet steaks

olive oil, salt and pepper (to taste)

baguette cut in to 1cm slices
- 1/3 cup sour cream
- 3 tbs horseradish cream

Handful chopped chives

2 cloves garlic
For Balsamic Onion Jam
For Steak and Crostini
Directions
For the jam, heat butter and olive oil in a pan and add onions and salt and cook for 10 mins until soft and reduced.
Add vinegar and sugar, reduce heat and cook for 35 mins until liquid has evaporated. Cool
Preheat BBQ for direct cooking over medium heat (180 - 200 deg). Allow meat to come to room temp before brushing with olive oil and seasoning with salt and pepper.
BBQ steaks, turning once until desired doneness (medium 60 deg) Remove and rest.
Brush slices of baguette with oil and grill for 1-2 mins until toasted. Rub slices of toasted baguette with cut garlic pieces.
Mix together sour cream and horseradish. Top baguettes with a layer of onion jam, a slice of steak and top with horseradish mix. Finish with chives and serve immediately
