Sweet, sticky and baked to perfection on the Weber 🍍🔥 This pineapple upside-down cake proves your BBQ isn’t just for meat—golden caramel, fluffy cake and that unmistakable BBQ flavour.

Pineapple Upside Down Cake

Ingredients

  • 125gm butter
  • 1 cup brown sugar
  • 440gm can pineapple rings
  • glace cherries
  • 2 cups self raising flour
  • 125gm butter extra
  • 1 cup caster sugar
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla

Directions

  1. Prepare the BBQ for indirect cooking 180 -200 degrees.

  2. Place convection tray and trivet into the BBQ.

  3. Combine 125g butter with the brown sugar and spread over the base of the cake pan or Weber frypan. Place the pineapple rings and glace cherries decoratively on top of the sugar and butter.

  4. For extra flavour sprinkle over the Fenglehorn Grilled Fruit Fairy Dust.

  5. Mix remaining ingredients in a bowl until smooth and creamy. Pour mixture over the pineapple base and spread it evenly.

  6. Place cake onto the trivet and cook for 25-30mins or until browned. Turn it out upside down and serve with cream or ice cream.
